This recipe is really tasty and a great one if you are following a keto diet. A quick tip, if your avocados roll around on your baking sheet, just cook them on an upside down muffin tin and they won’t move an inch! It is also better to use slightly smaller eggs (unless you have really nice big avocados) to avoid any of the egg spilling over the avocado.
Baked Egg in Avocado
Ingredients (serves 2):
- 1 avocado, halved and seeded
- 2 large organic eggs
- Salt and freshly ground black pepper, to taste
- 1 tablespoon chopped fresh chives
- Optional: 1 tablespoon spring onions
Instructions:
- Preheat oven to 200°C.
- Slice the avocado in half and remove the pits.
- Using a spoon, scoop out some of the flesh to make a bigger hole.
- Place the avocado halves on a lightly oiled baking sheet.
- Gently crack 1 egg into each hole and season with salt and pepper, to taste.
- Place into the oven and bake until the egg whites have set but the yolks are still a bit runny, about 15-18 minutes.
- Serve immediately, garnished with fresh chives or spring onions, if desired.
